Optional study allows students to work further with areas such as ice and vegetable carving or kitchen stewarding.
Culinary Skills and Practical Training
Practical work covers the use of kitchen tools and equipment, food safety, hygiene, weights and measures, culinary calculations, and different cooking methods. Students work with meat, poultry, fish, vegetables, starches, legumes, grains, salads, dressings, baked products, and dishes from different cuisines.
The course also addresses cleaning and sanitation procedures, kitchen organization, recipe yield calculations, and safe operation of equipment used in food preparation. A total of 1,600 hours of practical exposure is identified across center-based and industry training.
